Jeff Case of Mattydale won the blue ribbon and a $150 cash award in the Great American SPAM Championship held at the New York State Fair. The judges were looking for the easiest, most creative and tastiest SPAM Mac & Cheese recipes! Recipes were judged for Taste (45%) Ease of Preparation (30%), Presentation (25%). Winners received $150, $50, and $25 for 1st – 3rd place. The first place winning recipes (adults and kids) are submitted for national judging. Yee Ha! Western SPAM Macaroni and Cheese
1 tablespoon canola oil
1 green pepper, chopped
1 yellow pepper, chopped
1 red pepper, chopped
1 medium onion, chopped
1 (12 ounce) can SPAM Classic
3/4 cup butter
1 cup half & half
2 cups cheddar cheese, grated
1 cup parmesan cheese, grated
3 cups wagon wheel shaped pasta (hot, cooked & drained)
1. Heat the oil in a medium skillet. Add green, yellow, red peppers and onion and cook over medium heat until soft. Set aside.
2. Cut the SPAM into star shapes using a small cookie cutter. Brown in skillet over medium heat. Set aside.
3. Heat milk and butter in a medium saucepan. Stir in cheddar cheese until melted. Stir in parmesan cheese.
4. Toss with vegetables, SPAM and hot, cooked pasta and serve.
