CAZENOVIA -- New York State's Maple Syrup industry is expecting another record year for sales.
Demand for maple syrup has been increasing steadily. Maple syrup is now a $14 million a year industry in New York and thanks to technological improvements in harvesting techniques, the State is now the 3rd largest producer of maple syrup in the country.
Last year, 1500 maple syrup producers made more than 360,000 gallons of syrup. That is a 55% increase from the previous year.
Matthew Critz, owner of Critz Farms, says an international demand for maple syrup is helping to boost sales. "People are trying to get foods from around the world. New York and the Northeast is the only place in the entire world where maple syrup is made. So there is a high demand," Critz says.
