Laura Hand's stuffed peppers recipe

Stuffed Peppers, 4 ways (serves 4)
For all:
1 cup raw rice (=3 cups cooked)
2 cups water
4 peppers, halved and cored , microwave 2 minutes
When stuffing is done, add to rice, stuff & microwave 2 mins
Shrimp
Medium onion, diced and browned in olive oil
add: 4 cloves garlic, minced or smashed
16 medium shrimp, cut bite sized
1 tbsp chopped parsley
splash of white wine
optional: sliced water chestnuts, diced tomatoes (for color)
Chicken
Medium onion, diced and browned in olive oil
add: 2 chicken breasts (4 halves) cut bite sized
sliced mushrooms, small can or 12 cup fresh
splash of red wine
optional: cream of mushroom soup, Sliced water chestnuts, carrot shreds (for color)
Ground Beef
Medium onion, diced and browned in olive oil
add: 1 pound ground beef
1/2 tsp nutmeg
1 tsp curry
4 tbsp jarred pasta oil
Eggplant
Medium onion, diced and browned in olive oil
add: 4 garlic cloves, mashed or minced
1 cup bite sized eggplant (microwave 2 mins, drain)
4 tbsp jarred pasta sauce
sliced mushrooms, small can or 12 cup fresh
optional: sliced water chestnuts
top with slice cheese when microwaving
