From the farm to your fork – a tour of Birdsall Beef showed it all

SCOTT -- This month is New York Beef Industry Council's annual "May is Beef Month" event and some in Central New York got to see the entire farm to fork experience.

On Wednesday, food service providers, restaurant owners, and food educators took a tour of Birdsall Beef in Scott, just north of Homer.

Tour goers saw how cattle are raised, what they are fed, learned about disease prevention and sampled steak. They were able to ask questions, and even got the chance to see a cow have an ultrasound.

Jean O’Toole, Director of Public Relations and Promotions for the New York Beef Industry Council, says that New York beef farmers have a lot of pride. She says the tour is a good way to clear up any possible mis-conceptions.

"The message is, is that beef is wholesome and healthy, and there’s a lot of people behind it. They are doing a doggone good job of creating the great eating experience for everyone out there," says O’Toole.

While beef sales are stable, O’Toole says that prices are up due to demand this time of year, and from the drought in the southeastern states.
